Where would one use "an" instead of "a"?

For example, I have seen "an honest" and "a honest" as well as "a animal" and "an animal". So what's correct? Please provide your sources, while it's not that I don't trust you, it's that I'm not sure, since in school we're taught that if the word starts with a vowel its "an" and that rule. Thank you.
